Banana pancakes that your child will love

When Zaza was a few months old, Lindsay texted me about this pancake recipe and now Zaza eats it at least once a week. They’re delicious, nutritious, and easy – I make them, Michael makes them, and Nanny Zaza makes them.

They actually remind me of this 3 ingredient pancakes (Remember to add some TSC Jam for 5 seconds ).

Anyway, Lindsay’s pie recipe is our way of doing it, so I couldn’t be more excited to have it here to share it with all of you today.

Hello again, TSC readers! It’s Lindsay from Weekend biteWe are back with the second part of our Feeding the Kids series! If you haven’t read it yet, you should definitely catch up part One, which contains all my tips for getting started with solids and how to make it fun for you and your baby! Now I’m here to share one of my favorite recipes, banana egg pancakes.

Lauren and I are definitely on the same page when it comes to recipes – they should be quick, easy, and healthy. And if you’re a new mom, you know how precious any extra space is, the simpler and more efficient it is, the better! These pancakes are all of the above and so delicious, you’ll want to make some extras for you too.

As mentioned in Part one afterI started my son Noah on mashed foods first, just because that made me feel more comfortable. When he seemed more willing to eat finger foods, the first food I really wanted him to try was eggs.

They are packed with healthy fats and proteins and tons of important nutrients like choline which is essential for their developing brains. It’s also the first important food to work in their diet to help reduce the risk of developing an egg allergy (one of the most common allergens).

So obviously I was interested in the eggs for him… the only problem was that he wasn’t in them, at all. I kept trying them and realized I had to come up with another way to get them into his diet.

Enter these pancakes!

The first time I made them, Noah hurt them so quickly that I swore I should feed them to our dog, Benny. They instantly became our breakfast, and so far at 19 months old, they are all-time favourite. I make some changes to it several days a week!

The rule for the recipe is as simple as it gets: 1 mashed banana + 2 beaten eggs. This is! From there you can add whatever you want to it – I like to add chia seedsAnd the flaxseedAnd the hemp seeds, various spices such as cinnamon or NutmegAnd the almond butter or Peanut Butter, or throw it in Blender With some spinach (the Lauren/Zaza way!).

I feel like I can’t even describe this recipe because it’s so easy, but here it is. Definitely try them out with your kids and tell us how they like them!

Mini Banana Egg Pancakes:

ingredients

+ 1 banana

+ 2 eggs

Add-ons: Seasoning, Nut Butter, Ground Flax Seeds, Chia Seeds, Hemp Seeds Spinach… Feel free to get creative!

Makes 6-7 pancakes, depending on their size

Mash the bananas in a bowl and beat the eggs until smooth. Slide any add-ons you want. If you want to add spinach, just put all the ingredients in a blender and blend them.

Warm oil or butter in a frying pan – I use it olive oilAnd the Coconut OilAnd the Grass-fed butter, or avocado oil.

Put the mixture into the mixture with a spoon deprivation. A little tip for making the pancakes thicker and fluffy: Once the batter starts to thicken, add another teaspoon in the middle before flipping to give the pancakes a little extra height. Then flip and cook for another minute or so on the other side.

♡ Serve! (Initially when Noah was about 6 or 7 months old, I would cut it into strips or small pieces so it was easy for him to pick up. Now I cut it in half and it’s fine!)
