An easy Caesar salad dressing using the main ingredients that make up the classic: lemon + parmesan cheese + anchovies, softened with Greek yogurt.

I was using Ann Borel Egg Free Caesar Dressing Long time recipe, it’s restaurant quality and don’t miss the egg. I seized the opportunity and replaced Greek yogurt with olive oil and was surprised how successful it was. Good cheese is a must, I only use Parmigiano Reggiano or Pecorino Romano, that powder that comes in a plastic container that doesn’t cut it!

How to pour anchovy paste over an anchovy

If you prefer to use anchovy paste here, a good rule of thumb is 1 anchovy Fillet = 1/ 2 tsp Anchovy dough.

And for those who don’t like anchovies, you can definitely leave it out, but I think they make the sauce. Your choice!

  • 1/3 Glass Grated Parmigiano Reggiano
  • 1/4 Glass Fresh lemon juice
  • 1 A small garlic clove
  • 1/2 Tablespoon Dijon Mustard
  • 2 Anchovy fillet
  • 1 Tablespoon Extra virgin olive oil
  • 5 Tablespoon Skimmed Greek yogurt
  • In a food processor bowl, add cheese, lemon juice, garlic clove, mustard and anchovy.

  • Turn on the device and let it run for 15 to 20 seconds.

  • Add the oil and milk, and let the machine run for another 15 seconds.
