I was using Ann Borel Egg Free Caesar Dressing Long time recipe, it’s restaurant quality and don’t miss the egg. I seized the opportunity and replaced Greek yogurt with olive oil and was surprised how successful it was. Good cheese is a must, I only use Parmigiano Reggiano or Pecorino Romano, that powder that comes in a plastic container that doesn’t cut it!
How to add more protein to a salad:
- Try this with roast chicken
- Add grilled salmon
- Add grilled shrimp
- Add boiled eggs and chickpeas
How to pour anchovy paste over an anchovy
If you prefer to use anchovy paste here, a good rule of thumb is 1 anchovy Fillet = 1/ 2 tsp Anchovy dough.
And for those who don’t like anchovies, you can definitely leave it out, but I think they make the sauce. Your choice!

- 1/3 Glass Grated Parmigiano Reggiano
- 1/4 Glass Fresh lemon juice
- 1 A small garlic clove
- 1/2 Tablespoon Dijon Mustard
- 2 Anchovy fillet
- 1 Tablespoon Extra virgin olive oil
- 5 Tablespoon Skimmed Greek yogurt

In a food processor bowl, add cheese, lemon juice, garlic clove, mustard and anchovy.

Turn on the device and let it run for 15 to 20 seconds.
