As the weather begins to change and warm up in the spring, I find myself looking for recipes with a more refreshing feel and lighter weight. I especially love the quick and easy cold noodle salads! It only took 15 minutes to make and it was amazing! It’s vegan-friendly so it’s great to bring to the food! It’s also very versatile! Enjoy choosing the colorful and fresh fruits and vegetables you love to add! Sometimes I replace olives with dried tomatoes and I love it that way too!

You can’t go wrong with this salad! It is great to apply because it tastes better while seated. I love wrapping it for my kids for lunches to change it from sandwiches every day. We love even taking it for a walk! It’s such a treatment! All of the great vegetables packed inside add a lot of texture, flavor, and color to your pasta. The spicy Italian sauce topped with this pasta is very good. It’s the perfect finishing touch to this pasta salad. It’s easy to make at home and it’s incredible! I use it on a lot of salads, not just this! Trust me when I say this California Spaghetti Salad is going to be a hit wherever I go!

  2. Combine all ingredients: In a large bowl, add cherry tomatoes, zucchini, cucumber, green and red peppers, red onions and olives to the pasta.
  3. Make the sauce: Whisk together the Italian salad dressing with Parmesan cheese, sesame seeds, paprika, celery seeds, and garlic powder.
