This easy chicken salad recipe is made with green onions and cilantro with a pinch of lemon. It’s a delicious twist on the traditional chicken salad with some Latin flavor!

I often keep chicken salad on hand for quick weeknight lunches, and I like to play with flavors so you never get bored. For the cilantro chicken salad, I added lime juice, garlic powder, cumin, and chili powder for a Latin twist. How to make chicken salad

This Chicken Coriander and Lemon Salad recipe is easy to prepare and only takes about 15 minutes if your chicken is already cooked. I usually buy roast chicken from the supermarket or use leftovers when I grill a chicken myself. Makes a tender, juicy chicken salad with minimal effort. If you don’t want to use grilled chicken, you can also cook chicken breasts in the slow cooker or boil them on the stove.

The great thing about chicken salad is that there are so many ways you can eat it. Just another reason why it’s one of my favorite easy lunches!

  • 7 ounce cooked chicken breastAnd the shredded or cut into cubes
