Farro is one of my favorite grains, and it’s great to try if you’re tired of brown rice or quinoa. This Mediterranean Faro salad can be served chilled or at room temperature and will be perfect to bring to your plate or barbecue this summer. Farro is an ancient Italian pill that has become very popular in the United States and throughout Europe in the past decade. It is a great source of fiber, protein and iron, with a nutty flavor and chewy texture. It’s great in salads, side dishes, and even soups. The pearl variety is easy to cook like boiling pasta and only takes about 15-20 minutes. If you’ve never eaten farro, I highly encourage you to try it !!

What is served with Faro Salad:

This Mediterranean Faro Salad makes an excellent side to any summer barbecue. Present it with Grilled chicken kebab or Lamb chops. You can also add some roast chicken or steak to Alvaro to make a bowl of cereal.

The differences:

  • If you can’t find farro, you can use barley, quinoa, whole-wheat couscous, brown rice, or even whole-grain elbow pasta instead.
  • If you do not like feta cheese, ignore it or eat goat cheese.
  • Add more vegetables like roasted red pepper or chopped spinach.
  • Replace sun dried tomatoes with cherry tomatoes or fresh grape tomatoes.
  • Replace mint or parsley with basil.
  • For more flavor, add fresh chopped garlic or kalamata olives.

  • 1 cup Farrow is uncooked
  • 2 Tablespoon Chopped red onions
  • 1/4 cup Dried and chopped tomatoes
  • 1/4 cup Fresh grated feta cheese
  • 2/3 cup Finely chopped cucumberAnd the Remove seeds
  • 1/4 cup Finely chopped turkey pepper
  • 1 Tablespoon Fresh lemon juice
  • 1 Tablespoon olive oil
  • 1 Tablespoon Mint or parsley, finely chopped
  • Kosher salt and fresh pepper to taste
  • Cook farro in salted water according to package directions until soft, about 15-20 minutes. Drain and leave to cool.

  • Mix with the rest of the ingredients and stir well. Serve chilled or at room temperature.
