An easy to use strawberry recipe

My kids love strawberries. So much so that even though they’re not in season at all at the moment, my mom was really nice and was buying it from Costco for my girls as a treat. We have been growing strawberries in my garden for 3 years. And since I rearranged my garden 3 times, my strawberry plants have been planted 3 times. I wasn’t sure which way they would do this year after my third transplant, but they did better than ever! My girls (and neighborhood kids) have been picking strawberries well in October.

When you have a lot of strawberries, you start to think of delicious recipes to use in them. Making strawberry puree is a great way to use strawberries that can get a little stale. This is where the strawberry butter recipe was born. It’s sweet, fluffy, and totally refreshing with a fresh strawberry flavor. Take your baking bread to the next level with this amazing strawberry buttercream!

How to make strawberry butter

This contains only 4 ingredients! It is very simple. First, rinse and peel the strawberries and place them in a food processor. Blend until you get a smooth puree. Strawberry puree smells like heaven. Seriously, I can just eat this with a spoon.

If you don’t like the seeds, you can eat your puree and shove it through a fine mesh sieve. This step takes some time – maybe 10 minutes. You can definitely skip this step if the seeds don’t bother you!

You will want the butter to be at room temperature when you blend it with the strawberry puree. I used a kitchen helper and took out daylight from it. And voila – you’ll have a delicious, fluffy, creamy strawberry honey butter. Put it in a cute jar to give it away!

Strawberry butter lasts 2-3 weeks in the refrigerator. Make sure to put them in an airtight container to keep them fresh for longer. Enjoy!
