What is chicken bruschetta?

Bruschetta in Italian is actually an appetizer consisting of bread that is grilled, rubbed with garlic, and covered with olive oil and salt. Tomatoes and other toppings are often added like this simple tomato I used on my roast chicken. This recipe takes a classic Italian appetizer and turns it into a main course.

Tomatoes are the star of the show. To quote my husband “You can serve this on cardboard and it will be good!” We love it in the summer when the tomatoes are ripe, serve it with some crispy bread to soak up the juice if you’d like, or top it with a great big salad.

  • 3 medium sized ripe tomatoes
  • 2 small garlic clovesAnd the minced
  • 1/4 cup chopped red onion أحمر
  • 2 Tablespoon fresh basil leavesAnd the section
  • 1 Tablespoon Extra virgin oil
  • 1 Tablespoon balsamic vinegar
  • Kosher salt and fresh pepper to taste
  • 3 ounce Partially skimmed mozzarella cheeseAnd the Cubes (eliminate whole 30, paleo)
  • 1.25 pound 8 chicken cutlets, cut into thin strips
  • Combine onion, olive oil, balsamic, 1/4 teaspoon kosher salt and pepper. Take a few minutes.

  • Chop the tomatoes and put them in a large bowl. Combine with garlic, basil, balsamic onion mixture, and 1/8 teaspoon salt and pepper to taste. Set it aside and leave it on for at least 10 minutes or overnight.

  • Add cheese when you’re ready to serve.

  • Season chicken with salt and fresh pepper.

  • Preheat the grill over medium-high heat, clean and oil it to prevent sticking.

  • Grill chicken for 2 minutes on each side, set aside on a plate, cover with bruschetta and serve.
