I’m obsessed with the healthy oatmeal that I’ve been eating nearly every morning! For a protein boost, I put nut butter plus banana and strawberries on top, but you can add anything you like! Three secret weapons rich in protein, oats, cottage cheese and egg whites are what make this crisp, light and fluffy waffle case – and the blender is the way to success. A blender does all the work here, it uses it to mash the cheese along with the rest of the ingredients for a fuss-free and fast lightening process.

Cottage cheese, which is made by culturing milk, takes the place of the yogurt or milk that is commonly used to make waffles and provides higher protein to boot. In this recipe, the full-fat hut is used since there isn’t any of the melted butter or added oil that you usually find in waffle recipes. For lighter and fluffy waffles, scrambled egg whites are folded into smooth tops in the batter. If you prefer to skip this step, it won’t be thin but it will still work fine!

How to make oatmeal

  • Add cheese, egg yolk, vanilla, and sugar if using in a blender. Add 6 tablespoons of water, oatmeal, baking powder, and salt, and mix until smooth. Transfer to a medium bowl using a spoon to scoop out all of the mixture.

  • Beat the egg white until smooth peaks, then add to the mixture.

  • Spray your preheated waffle iron with an oil spray. Pour the mixture into the iron (about 1/4 cup) and cook until golden brown and the steam release stops.

Note that you can omit the sugar or use your favorite sweetener.
