Nut milk maker keeps my future full of almond milk


Oat and nut milks occupy a special place in my kitchen ecosystem. It’s an acronym for many of my favorite breakfasts, from chia pudding to me juicesEspecially when hot weather makes running my stove undesirable. But I’ve been frustrated with the contents of the refrigerated aisle these days, in large part due to the desire to reduce the single-use packages and plant-based stabilizers found in many alternative dairy brands.

And somehow, I can always grab a snack or cook my way through my stash of nuts before I actually find time to make milk. Then a co-worker told me JOI Organic Oat and Nut Milk Concentrate. The ingredient lists are short. Shelf stable from JOI Organic Almond Base Made with only one ingredient – blanched organic almonds. It’s basically similar to unroasted nut butters that are easily emulsified. Making milk is as simple as mixing together JOI and water for thirty seconds using a blender or blender portable milk frother. I’ve found that watching a watch is key — mix it up for too long and it’ll separate. One 12-ounce bag of oat milk powder makes 4 quarts of oat milk, and a 15-ounce bowl of Basic Nut Milk (which also comes in cashew) produces 7 liters. Mine doesn’t go that far because I like to add a teaspoon or two of powder or base every time I blend for a luxurious, silky smooth texture. After reconstitution, the milk substitute can chill in the refrigerator for up to a week.

Let the record show: I’ve tried far more than my fair share of nut milk concentrates over the years, and JOI’s are infinitely creamier than the rest—never sticky or gritty. Every Sunday, I lower my blender to make two cups for the next week. As I worked my way through a pot of concentrated nut milk, I tossed it into my recycling bin, which is noticeably empty now because it wasn’t filled with half-gallon containers of alternative milk. As for the oat milk powder, once you empty the bag, I take it to my neighborhood garden and bury it in the compost bin. Then I walk home in the summer heat, and I dream of Raspberry juice and tahini I will be with my wages.
