Fried chicken is my favorite food!! But I never fry at home, so when I crave fried chicken I make it in the oven or Air Fryer! That is if you want to eat healthy food but don’t sacrifice flavor, your family will love it! Peel the chicken, cover with the Dijon mayonnaise mixture that makes it tender, and coat with bran flakes seasoned with salt, pepper, cayenne pepper, paprika, and garlic powder. How to make healthy fried chicken in the oven
I start by removing the skin, and coat the chicken with ground and seasoned grains like bran flakes. The key to getting crispy chicken is to place a wire cooling rack over a baking tray lined with aluminum foil. This way hot air can circulate under the chicken to make sure it cooks evenly, and the outside layer of chicken juices won’t seep out.
What do you serve with fried chicken?
This fried chicken will be delicious and served with corn on the cob, stuffed mashed cauliflower, Broccoli and double grilled potato cheese, or Mashed sweet potatoes. For some veggie ideas, try Roasted Brussels sprouts with balsamic shallots or Green Beans, Roasted Parmesan.

- 6 Large bone thighsAnd skin removal
- 2 1/2 cups bran flakesAnd (Use gluten-free cornflakes for GF)
- 3 Teaspoon kosher saltAnd Less if you use regular salt
- 1/2 Teaspoon garlic powder
- 1/2 Teaspoon Red pepper
- 1/2 Teaspoon fresh black pepper
- 1/2 Teaspoon Cayenne pepper
- 5 Tablespoon Hellmann’s light mayonnaise
- 1 Teaspoon Dijon Mustard

Preheat the oven to 400 Fahrenheit.

Line a baking tray with foil and place the rack on top of it. Oil spray rack.

Crush the grains in a food processor or mincer.

In a bowl, mix the ground grains, salt, paprika, garlic powder, black pepper, and cayenne pepper.

Place in a shallow dish or ziplock bag.

Mix mayonnaise with Dijon mustard.

Using a cooking brush, brush the chicken and then brush the chicken with the ground grain mixture.

Place the chicken on a wire rack and spray with oil.

Bake for 45 minutes, or until chicken is cooked through and internal temperature reaches 165 F.
Air Fried Chicken Directions:

Drizzle chicken pieces with oil and fry in 370F 22 to 24 minutes, flipping chicken halfway through and spraying top again, until crumbs are golden and chicken is completely cooked through.
