Packed with sweet and delicious pineapple and coconut flavour, its charm is totally impossible to resist!

This is an honestly great recipe on a Saturday afternoon, or any time you’re craving a taste of Hawaii, because pineapple bars can be made with just five basic ingredients you can always keep on hand.

pineapple: Look for crushed pineapple – I used canned, but fresh is also fine if you want to crush it in a blender. If you can only find pineapple chunks, you can also crush them in a blender with a little liquid.

coconut milk: This should be the full-fat canned kind sold by brands like Thai Kitchen or Native Forest, not the lite or thin brew sold in the refrigerator or settled milk section as a dairy milk substitute.

Shredded coconut: Feel free to use sweetened or unsweetened coconut, thick or thin, long or short. If you’d like to sprinkle a little on top before baking for presentation, that’s okay too.

Graham crackers: Regular or gluten-free graham crackers can be used. (For vegetarians, be sure to look for a brand without honey.) Alternatively, most crunchy cookies can be crushed and used in place of graham crackers. There is also a keto magic square recipe linked below that requires almond flour as a base.

  • 1 1/2 cup Pretty graham cracker crumbs (For Keto, try this Keto Magic Bars)
  • 2 Tablespoon Favorite dessert
  • 1 1/4 cup crushed pineapple drain
  • 2/3 cup Full fat shredded coconut, sweetened or unsweetened
  • 1 1/4 cup Canned full fat coconut milk
  • 3 Tablespoon oil or butter (delete if desired)
  • * The oil or butter version will taste more like the crust of traditional magic bullion, while the oil-free version has a softer crust that some (but not everyone thinks) find it to be gummy, so it’s entirely your choice.To make the recipe: Line an 8-inch baking dish with parchment paper (or grease it well). Preheat oven to 350°F, in a bowl, toss cookie crumbs with sweetener and optional oil. Just if using a dry sweetener without oil, also add 2 tbsp water. Spread evenly in the pan, and press down. Combine remaining ingredients in a bowl, spread over crust, and place on the middle rack of the oven. Bake 35 minutes.
