A light and fluffy whole wheat pie stuffed with fresh strawberries and topped with strawberries too! Delicious strawberry waffles are the perfect breakfast for special occasions.

How to make strawberry pies
We love to add fruit to pies. Berries, bananas, peaches … you name it. It’s the perfect way to sweeten your breakfast with natural sugars and boost the nutritional value of the sometimes unhealthy breakfast option. But strawberries are our favorite fruit. I decided to make this pie recipe even better by chopping some strawberries and adding them directly to the pancake mixture. And it turned out delicious !!
I don’t think there is a substitute for fresh strawberries, but if you can’t get it, frozen strawberries will work in a pinch. Make sure to thaw and filter before chopping, otherwise you will end up with a lot of excess liquid in the mixture.

Of course I couldn’t stop putting strawberries in pancakes! They’ve accumulated fresh strawberries, too! Test the sweetness of your berries – we sprinkled them with a little maple syrup because our berries were a bit on the tart side. But if your berries are too sweet, you may not need to!
What is the trick to make puffy pies?
Fresh baking powder and thick dough are our tricks for making super thin pies! The mixture should drip from the spoon into lumps. If it flows easily, the batter is too fluffy and will make for flat patties. And make sure not to get over-mixed! Only stir until the dry ingredients are combined. There will still be lumps of flour – that’s okay! Turned too much, you will end up with a crusty pie.
