I love it when I find a recipe for my kids to eat. This is one of those recipes. Cakes are the best! Instead of taking an hour to bake a loaf of bread, I could take 20 minutes to prepare individual servings in a muffin pan. It makes waiting to eat them more tolerable. Give them enough time to cool down a little and then butter them up, so yummy!

- banana: Overripe and mashed
- an egg: Use a very large or very large egg.

If you know you want to make them and the banana is not fully ripe, you can throw it into a brown paper bag for a day. If you need to ripen them at the moment, put the banana with the peel on a cookie sheet and put it in a 300 degree oven. When the peels turn black, they are ready to use. Let them cool down a little and mash them away.
- Do not over-blend: When the waffles are not light and fluffy but are short and dense, it is usually due to over-mixing. If you are afraid of over-mixing, mix it up by hand.
